Every year Marie's Candies handcrafts 8,500 cream filled eggs for Easter, and it's quite a process!
Day 1: The cream center is made from scratch, just like the cream in our regular chocolates with cream centers
Next, the cream is cut, weighed to the right size, and formed into an egg shape. It's rumored that after the last egg is formed, the ladies do a little celebration dance!
Day 2: The eggs are covered in chocolate or pastel coating. The 2 oz. and 1/4 lb. sizes are decorated while the chocolate or pastel coating is still wet. The 1/2 lb. and 1 lb. sizes have to dry for a day before they can be decorated. A tiny hole is poked in all the flavors, except for Peanut Butter, so when the cream expands, the eggs don't explode.
Day 3: The holes are patched with melted chocolate. The smaller eggs are wrapped and ready for purchase. The 1/2 lb. and 1 lb. sizes are decorated.
The decorating ladies say it's fun to hand-decorate the eggs, though a bit harder than decorating a cake because of all the tiny details and creativity involved.
Day 4: The larger eggs are wrapped and ready for purchase. Some of the eggs are taken to the ladies in the design room who package them with other candies and beautiful gift items.
